Traditional and authentic cooking


There is a saying that goes: “Tell me who your friends are and I will tell you who you are,” but we could easily change this to: “Tell me what you eat and I will tell you who you are”. Traditional food, above all else, recounts the history and culture of a place and of its inhabitants. The Tuscan culinary tradition is very complex and ranges from simple and authentic dishes from the rural traditions to the very complicated dishes of the noble courts that inspired French cuisine.

During the winter at Villa Ferraia, we delight in teaching our guests how to prepare the most loved and well-known dishes from the traditional Tuscan cuisine as well as the lesser-known and forgotten dishes.

We can arrange for one, two, or several days dedicated to this activity to follow a path of discovery of the Tuscan flavors and know-how by organizing authentic cooking classes. Or, in line with the philosophy of our winter offer, we can instead wait until you are here and offer a spontaneous cooking class when the weather and the vegetable garden offer the right atmosphere and the right ingredients. Free from pre-organized schedules, we can choose together the right day for preparing delicious delicacies and dishes that made Tuscany famous in the gastronomic world. We can share the warmth of the fire in the fireplace and the stories that have always echoed within the kitchen walls.

Little-known but exciting ingredients are available in the months from autumn to spring and the dishes created are delicious and unique. Our organic vegetable garden and large greenhouse permit us to produce our own fresh ingredients throughout the year. The dishes can be enriched with other wonderful local products such as white truffles, Porcini mushrooms, extra virgin olive oil that has just been pressed, chestnuts and a thousand other delicacies that nature provides for us.
